One of the pioneers of Hawaii Regional Cuisine, Chef Peter Merriman's restaurant in Waimea is also loved by one and all. Merriman's is dedicated to using "90% local product in its dishes, and many of his growers farm organically." Visitors are known to drive all the way from the other side of the island (trust me, that's a long drive) just to feast on... Merriman's Wok-Charred Ahi and Ponzu Mahimahi. Ask about the Merriman's Farm Tour which takes guests to local farms such as the Honopua Family Farm to see how your food is grown locally. Following the tour, guests return to Merriman's "for a special three-course dinner prepared by the chefs to highlight the products and produce from the farms."
