You're now face to face with the beautiful taro fields that you had just admired a few minutes ago from the Hanalei Lookout.  Most of this valley, along with the rare birds that nest here, are preserved as part of the U.S. Dept. of the Interior's Hanalei National Wildlife Refuge.  Taro (or kalo) grows especially well in this lush and wet valley, and the island of Kauai produces... approximately two-thirds of the state's entire crop.  Taro is an important and beloved traditional food staple for all Hawaiians.  Most visitors today are familiar with the purple paste named poi that is produced by cooking and skillfully pounding the corm of the taro plant.  For food connoisseurs and those in the know, poi is an ono (delicious) accompaniment to any meal!
